Optional Garnish, green onions, sesame seeds, additional red peppers

In a mixing bowl add chicken to cornstarch. Toss until the chicken is completely coated in the cornstarch. In a skillet on medium-high heat add oil and cook until chicken is almost cooked through. While chicken is cooking mix together hoisin sauce, soy sauce, brown sugar, garlic, rice wine vinegar, sesame oil, ginger, and crushed red peppers. Pour over chicken and simmer until chicken is cooked completely through and has thickened a little. You can save little sauce back and add additional cornstarch to sauce mix then add to chicken. This will give you a ticker sauce.

This recipe can be cooked in the crockpot. When cooking chicken do not cook clear through. Cook until slightly brown and then add to crockpot. Pour sauce over chicken and cook on low for 3-4 hours or until chicken is finished cooking.

½ cup Extra virgin olive oil

½ cup Walnuts

Add walnuts, Parmesan cheese and lemon juice to the chopped basil and process 1-2 minutes more (until the pesto is mostly pureed and mixed well, if you like it more chunky process less) Season with salt and pepper and pulse a couple more times.

Store Pesto in a glass jar and it will keep for more than a week. Pesto can be frozen. Some experts recommend you leave the cheese out if you are planning to freeze the pesto and then adding the cheese when you thaw the pesto.

Pork Carnitas Recipe

4 pound boneless pork butt, fat trimmed and cut into 2 inch cubes 1 1/2 tsp salt

3/4 tsp pepper

1 tsp ground cumin

1 onion, peeled and halved

2 bay leaves

1 tsp dried oregano

2 Tb fresh lime juice 1 to 1 1/2 C water

1 medium orange, juiced and keep the spent halves

Prep: Adjust oven rack to lower middle position and heat to 300 degrees. Combine all the ingredients in a large Dutch oven, including the spent orange halves and juice.

Braise: Bring the mixture to a simmer over medium-high heat, uncovered. Once it simmers, cover pot and transfer it to the oven. Cook until the meat falls apart when prodded with a fork, about 2 hours. You can also complete this step in a

crock pot set on high for 6-7 hours. You will have more liquid to reduce in the next step however.

Reduce: Remove the pot from the oven and turn on the broiler. Use a slotted spoon to remove the meat from the pan and place it on a large foil-lined jelly roll pan.

Remove and discard everything from the pot except for the cooking liquid. Place pot over high heat on the stove and boil until it thickens and is syrupy, about 20 – 30 minutes. You should have about 1 C of liquid remaining when it is finished.

Shred: While the liquid is reducing, use two forks to pull each cube of pork into three equal sized pieces. Once the liquid has reduced, gently fold in the pieces of pork into the pot. Try not to break up the pork any further. Taste and add additional salt and pepper.

Broil: Spread the pork back onto the foil lined pan and evenly spread the meat around so there is a single layer of meat. Place the jelly roll pan on the lower middle rack of the oven and broil until the top of the meat is well browned and edges are slightly crisp, about 5 to 8 minutes. Using a wide metal spatula, flip the pieces of meat and broil the other side until well browned and edges are slightly crisp, 5 to 8 minutes. Serve immediately in a tortilla with all your favorite toppings.

Crock pot directions

Reduce the water to 1 ½ cups. Because a slow cooker uses a lower temperature compared to braising in the oven, little to no water evaporates during the cooking process. This leaves way too much liquid for step 4 of the recipe.

Use the low setting on the slow cooker for 6- 8 hours or the high setting for 4-6 hours. The end result should be super tender and easily fall apart. Don’t rush this step. Give it more time if needed.

Follow all other instructions as written. Just don’t give up on that reduction of the cooking liquid. It will take time due to extra moisture from cooking at a lower temperature.
